About This Tour

Vietnam’s cuisine changes character as you travel from north to south. This fourteen-day private journey follows those regional flavours through Hanoi, Bai Tu Long Bay, Hoi An, Hue, Ho Chi Minh City and the Mekong Delta. Beyond tasting well-loved dishes, you will have opportunities to meet local cooks, explore everyday food markets and understand how ingredients, climate and history shape each table.

Hands-on cooking is part of the journey: discover the balance of herbs in northern recipes, the trading-port influences behind Hoi An specialities, and the smaller dishes of Hue’s culinary heritage. The southern leg brings vibrant street-food culture and a closer look at tropical produce in the Mekong. A one-night bay cruise provides a restful change of pace between the city and coastal regions.

The trip is designed for travellers who enjoy eating thoughtfully, learning practical skills and spending time with local hosts. Haivenu can adjust the pace, accommodation, transport and cooking experiences to your group. Workshop menus, street-food stops and boat excursions depend on the operating schedule and conditions; dietary requirements should be discussed before booking rather than treated as automatically guaranteed.

Day-by-Day Itinerary

A flexible outline of your private Vietnam journey.

Day 1Arrive in Hanoi – First Flavours of Vietnam

Meet the pre-arranged Haivenu representative on arrival at Noi Bai International Airport and travel to your confirmed Hanoi hotel. Check-in depends on the arrival time and hotel policy. If you arrive early enough and wish to begin tasting local food, request a relaxed Old Quarter walk with selected snacks such as pho or bun cha; this is an optional introduction rather than a fixed meal service on late arrivals. Take time to rest after your flight and discuss dietary preferences, allergies and the cooking experiences planned for the journey with your guide.

Overnight: Hanoi hotel – night 1 of 13

Meals: No meals automatically included on arrival day; optional food tastings as quoted

Places: Noi Bai International Airport, Hanoi → Hanoi

Day 2Hanoi Heritage and Northern Street-Food Tasting

Explore selected Hanoi heritage sites at a comfortable pace, such as the Temple of Literature or the Vietnam Women's Museum, depending on opening hours and your interests. Join a guided tasting route to compare northern staples such as bun cha, banh cuon and savoury snacks while learning about their ingredients and food traditions. A motorcycle-passenger experience is optional, requires a properly licensed operator, helmet and advance consent; the standard plan can instead use private vehicle transfers and short walks. Allow time for breaks and a free evening rather than crowding in every attraction.

Overnight: Hanoi hotel – night 2 of 13

Meals: Breakfast and the confirmed guided street-food tasting; other meals as quoted

Places: Hanoi → Hanoi

Day 3Hanoi Market Visit and Hands-On Cooking Class

Visit a working food market selected by the booked cooking school, with a local chef or host explaining common herbs, spices, produce and ingredient choices. Continue to a pre-booked hands-on cooking class to prepare a manageable selection of northern Vietnamese dishes, with alternatives discussed in advance for dietary needs. Enjoy the meal made during the class. The class location, menu, start time and any market or home visit will be confirmed with the actual operator; these cannot be guaranteed from an unconfirmed sample programme. Keep the later afternoon flexible for rest or independent food exploration.

Overnight: Hanoi hotel – night 3 of 13

Meals: Breakfast and the cooking-class meal when included in the confirmed class package

Places: Hanoi → Hanoi

Day 4Hanoi to Bai Tu Long Bay – Overnight Cruise

Leave Hanoi with the confirmed transfer for the Bai Tu Long Bay cruise departure point. Allow a substantial morning road journey and check the operator's current marina rather than relying on older port instructions. Board the pre-booked Dragon Legend or a clearly agreed equivalent cruise, receive a safety briefing and enjoy the bay's limestone scenery. Depending on the operator's live schedule and local access, the afternoon may include Thien Canh Son Cave or kayaking at a suitable site. An onboard cooking demonstration is a possible culinary highlight when offered. Dinner and the night are spent aboard; water activities remain subject to the captain's safety decisions.

Overnight: Confirmed Bai Tu Long Bay cruise cabin – night 4 of 13

Meals: Breakfast at the hotel; cruise lunch and dinner as provided in the booked cruise rate

Places: Hanoi → Bai Tu Long Bay cruise

Day 5Bai Tu Long Bay – Hanoi Airport – Fly to Da Nang – Hoi An

Enjoy the cruise's early-morning activities, which may include views around Vung Vieng Fishing Village if available on the operator's itinerary. Disembark in the late morning and drive towards Noi Bai Airport for the separately scheduled Hanoi-to-Da Nang flight shown in the final proposal. This is a long connection day: the actual flight must allow adequate road travel, airport check-in and traffic buffers. If the available departures do not work safely, Haivenu must adjust the travel date, overnight arrangement or flight in the accepted quote. On arrival in Da Nang, meet the arranged driver and continue to your Hoi An hotel for rest, without promising additional sightseeing.

Overnight: Hoi An hotel – night 5 of 13

Meals: Cruise breakfast or brunch as confirmed; other meals depend on the accepted transport plan

Places: Bai Tu Long Bay cruise → Hoi An

Day 6Hoi An – Tra Que Herbs, Market and Cooking Class

Start with a guided visit to a local market or herb-growing community around Tra Que, according to the provider's seasonal programme. Learn how fresh herbs help distinguish central Vietnamese dishes, then join a small-group or privately arranged cooking class featuring local flavours such as cao lau-inspired preparations, fresh rolls or banh xeo when the selected menu permits. Transport between locations may be by private car, easy walk or optional bicycle ride depending on your preference and the weather. After the class meal, explore a manageable section of Hoi An Ancient Town with your guide; site visits and evening activities follow the accepted itinerary.

Overnight: Hoi An hotel – night 6 of 13

Meals: Breakfast and a cooking-class lunch if specified in the booked programme

Places: Hoi An → Hoi An

Day 7Hoi An – Flexible Culinary and Leisure Day

Enjoy a free day in Hoi An to rest, explore a local coffee shop, visit a tailor or stroll in the historic streets. Travellers who prefer more food discovery can request an additional street-food walk, traditional noodle tasting or a lantern-making activity, subject to availability and separate confirmation. An Bang Beach may be an option if sea and weather conditions are suitable. No compulsory cycling or extra workshop is built into the day. Your guide can recommend suitable independent places to eat, but optional purchases and meals are included only if specifically listed in the final booking.

Overnight: Hoi An hotel – night 7 of 13

Meals: Breakfast when included at the hotel; other meals and optional classes are extra unless quoted

Places: Hoi An → Hoi An

Day 8Hoi An to Hue via Hai Van Pass – Hue Street Food

Drive from Hoi An to Hue with a planned scenic route through Da Nang and over Hai Van Pass when road conditions permit; photo stops at the pass or Lang Co are optional and may be changed for safety. Arrive in Hue, check into your hotel and sample a curated selection of local specialities, potentially including bun bo Hue, banh beo and banh khoai, with portions adjusted to appetite and dietary needs. A visit around Dong Ba Market may be possible subject to timing. River-boat or cyclo experiences can be added if booked, but are not automatically included in this transfer day.

Overnight: Hue hotel – night 8 of 13

Meals: Breakfast and a confirmed Hue street-food tasting; other meals as agreed

Places: Hoi An → Hue

Day 9Hue – Thuy Bieu Village Cooking and Imperial Heritage

Spend part of the day in or around Thuy Bieu Village, meeting a participating household or cook for an introduction to Hue ingredients and home-style or royal-influenced dishes. A gentle garden visit or optional bicycle ride may be offered, with vehicle transport as an alternative. Enjoy a pre-booked cooking session and the meal prepared, with the exact operator and menu confirmed ahead of time. Later, explore selected sections of the Hue Imperial Citadel with your guide, allowing enough time for museum visits and rest. Opening hours, weather and any local event restrictions can alter the order of activities.

Overnight: Hue hotel – night 9 of 13

Meals: Breakfast and the village cooking-class meal when specifically included

Places: Hue → Hue

Day 10Hue to Ho Chi Minh City – Southern Street-Food Evening

Transfer to Phu Bai Airport for the booked Hue-to-Ho Chi Minh City flight, with flight timing, baggage and airport transfers confirmed in the quotation. After arriving at Tan Son Nhat Airport, continue to your hotel and allow time to rest. If the flight schedule permits, take a guided early-evening tasting tour of southern street food, with dishes selected according to provider availability. A pillion scooter tour is optional only with licensed drivers, proper helmets and traveller consent; a walking or private-car-based food experience is a reasonable alternative. Do not guarantee every listed dish or a late-night itinerary after a delayed flight.

Overnight: Ho Chi Minh City hotel – night 10 of 13

Meals: Breakfast and evening food tour dinner where explicitly included in the proposal

Places: Hue → Ho Chi Minh City

Day 11Cu Chi Tunnels and Saigon Food Culture

Take a morning excursion to the Cu Chi Tunnels with an accredited local guide to understand the historical context and choose how much of the site to explore. Entering a narrow tunnel is optional and may be unsuitable for people with mobility, breathing or claustrophobia concerns. Return to Ho Chi Minh City after lunch or a suitable rest stop. Rather than trying to cover the entire city in one afternoon, choose one further historical visit or a relaxed market and neighbourhood food exploration according to your interests, available time and site opening hours. Return to your hotel for a free evening.

Overnight: Ho Chi Minh City hotel – night 11 of 13

Meals: Breakfast and lunch only when itemised in the confirmed programme

Places: Ho Chi Minh City → Ho Chi Minh City

Day 12Ho Chi Minh City – Cai Be Waterways – Can Tho

Travel south into the Mekong Delta, allowing for a meaningful road transfer. In the Cai Be area, take a locally arranged boat or village experience when water conditions allow, focusing on orchards, rural food ingredients, or traditional rice-paper and coconut-based food production. Cai Be's historic floating market should not be advertised as a guaranteed busy trading market; the main emphasis is on accessible village and river life. Enjoy a Delta-style lunch if included and continue by road to Can Tho, with an optional short village cycle replaced by walking or vehicle transport if preferred. Settle into the hotel before tomorrow's early start.

Overnight: Can Tho hotel – night 12 of 13

Meals: Breakfast and the Delta lunch only where stated in the written programme

Places: Ho Chi Minh City → Can Tho

Day 13Cai Rang Floating Market – Return to Ho Chi Minh City

Leave early by arranged boat to see Cai Rang Floating Market during its usual morning trading period, subject to river access, local rules and the actual number of boats operating that day. Your guide can explain how river commerce and tourism have changed over time without promising the scale of activity seen in older photographs. Depending on the booked route, visit a noodle-making or nearby food producer after the market, then return to the hotel, check out and travel by private vehicle to Ho Chi Minh City. The drive takes much of the afternoon, so keep the last evening free for rest or an independent meal.

Overnight: Ho Chi Minh City hotel – night 13 of 13

Meals: Breakfast and lunch only as specified; boat snacks are not presumed included

Places: Can Tho → Ho Chi Minh City

Day 14Depart Ho Chi Minh City

Enjoy breakfast at your hotel if it is included and take time for a final coffee or short independent walk according to your departure schedule. Your confirmed driver will take you to Tan Son Nhat International Airport with an appropriate check-in buffer for your booked flight. The international flight itself is not automatically included. Hotel late check-out, extra sightseeing and additional meals are subject to separate arrangements. The fourteen-day culinary journey concludes at the airport after thirteen nights across northern, central and southern Vietnam.

Overnight: Tour ends; no fourteenth overnight included

Meals: Breakfast when included in the booked hotel rate

Places: Ho Chi Minh City → Tan Son Nhat International Airport, Ho Chi Minh City

Frequently Asked Questions

Where does this 14-day culinary tour begin and end?

The proposed route begins with arrival in Hanoi and ends at Tan Son Nhat International Airport in Ho Chi Minh City. International flights are not automatically included.

How many nights are planned?

Thirteen nights: three in Hanoi, one on a Bai Tu Long Bay cruise, three in Hoi An, two in Hue, two in Ho Chi Minh City before the Delta, one in Can Tho and a final night in Ho Chi Minh City.

Which Vietnamese regional cuisines will we explore?

The journey focuses on northern flavours in Hanoi, central dishes around Hoi An and Hue, southern street food in Ho Chi Minh City and produce and food traditions in the Mekong Delta. Exact dishes depend on booked menus and availability.

How many hands-on cooking classes are included?

The sample programme plans cooking sessions in Hanoi, Hoi An and Hue, with exact class providers, menus, ingredients and fees included only if they appear in the accepted written itinerary.

Are all street-food tastings and meals included?

No. Guided tastings and meals are included only where the final quote and day-by-day meal plan expressly say so. Food on free days, drinks and personal purchases are separate.

Can vegetarian, vegan or allergy-aware meals be arranged?

Tell Haivenu about dietary needs and serious allergies before booking. Local cooks may be able to adapt ingredients and menus, but a completely allergen-free kitchen or prevention of cross-contact cannot be guaranteed.

Is the Bai Tu Long Bay cruise private?

The standard itinerary includes a booked cabin on a scheduled licensed cruise shared with other travellers. A whole-vessel private charter requires separate confirmation and pricing.

Can we fly to Da Nang on the same day we leave the cruise?

Possibly, but only with a confirmed later flight that allows sufficient time to disembark, drive to Noi Bai Airport and check in. If flight times are unsuitable, the itinerary must be modified before booking.

Which domestic flights are planned?

The itinerary plans Hanoi–Da Nang after the overnight cruise and Hue–Ho Chi Minh City. The carrier, baggage conditions, flight times and any necessary alternatives will be confirmed in the accepted quotation.

Must we ride a motorcycle or cycle during the tour?

No. Scooter-passenger tasting tours and village cycling are optional. Travellers may request walking, private vehicle or other suitable alternatives; any motorbike activity requires safe equipment and appropriately licensed operators.

Can we visit the Cai Be and Cai Rang floating markets?

The Cai Be day focuses on river communities and food producers rather than promising a busy floating market. An early-morning visit to Cai Rang in Can Tho is planned, subject to current river activity, local rules and weather; the number of trading boats varies.

Can the tour accommodate families or travellers with limited mobility?

A private group of two to twelve is the planning range. Cooking venues, boat access, narrow streets and historical sites can create mobility restrictions; give travellers' ages and access requirements before confirming services.

When is a good time to take this north-to-south culinary trip?

There is no single perfect season across Vietnam's north, centre and south. The centre can be particularly wet later in the year, while the north has cooler winter conditions and the south has seasonal rain. The final travel dates and weather alternatives should be reviewed together.

What is included in the private guide service?

English-speaking local guides cover the guided visits, cooking sessions and transfers specified in the accepted programme. A single specialist culinary guide is not guaranteed to accompany the group continuously through every region or during free time.

How do we request a tailored quote and check cancellation terms?

Send travel dates, party size, room preferences, dietary requirements, walking needs and any desired activity changes. Haivenu will confirm flight and cruise availability, class reservations, inclusions, total price and written cancellation terms before booking.
